
Ingredients
- 1 avocado, halved & pitted
- 2 eggs
- 2 pcs streaky bacon
- 20g Parmesan cheese, grated
- Salt & pepper, to taste
Instructions
- Preheat oven to 200°C.
- Line a baking sheet or baking pan with foil or parchment paper.
- Cut avocados in half and scoop out an additional tablespoon of the avocado flesh to create a larger nest for the eggs. Season to taste with salt & pepper.
- Gently crack one egg in each avocado half. If your avocado’s smaller in size, don’t pour all of the egg white.
- Pop ’em in the oven for roughly 15 minutes, or until the whites are set and the egg yolks are cooked to your liking.
- In the meantime – heat a pan on medium heat and cook bacon until crispy. Remove bacon from pan, let it cool and chop them up.
- When the egg whites are almost set (about 10 minutes in), add some grated cheese to the avocado boats in the oven. Then bake for remaining 4-5 minutes so that the cheese melts.
- Remove the avocado boat from the oven, top off with bacon bits and some more grated cheese if you like. Quick, easy and just delish!
Gouda Tip: Customise with whatever toppings you like. We’re talking: cherry tomatoes, fresh herbs like dill, basil, parsley or even some hollandaise sauce.
