
Ingredients
- 1 tbsp fresh lemon juice
- 1 tbsp white wine vinegar
- 1 tsp honey
- 1/4 teaspoon sea salt
- 3 candycane beets, peeled
- 3 cups fresh rocket leaves
- 1/4 cup fresh crumbled goat cheese
- 1 tbsp walnuts & pistachios
Preparation
- Whisk the lemon juice, vinegar, honey and salt in a small bowl until honey is dissolved. Gradually pour in the oil and whisk to combine.
- Shave the beets into ribbons with spiral slicer, or into thin discs with a share knife.
- Put the beets in a salad bowl over a bed of the rocket leaves. Drizzle with enough dressing to coat. Sprinkle the goat cheese, pistachios and walnuts over the salad.
