Candycane Beetroot & Goat Cheese Salad

Ingredients

  • 1 tbsp fresh lemon juice
  • 1 tbsp white wine vinegar
  • 1 tsp honey
  • 1/4 teaspoon sea salt
  • 3 candycane beets, peeled
  • 3 cups fresh rocket leaves
  • 1/4 cup fresh crumbled goat cheese
  • 1 tbsp walnuts & pistachios

Preparation

  1. Whisk the lemon juice, vinegar, honey and salt in a small bowl until honey is dissolved. Gradually pour in the oil and whisk to combine.
  2. Shave the beets into ribbons with spiral slicer, or into thin discs with a share knife.
  3. Put the beets in a salad bowl over a bed of the rocket leaves. Drizzle with enough dressing to coat. Sprinkle the goat cheese, pistachios and walnuts over the salad.
