
Ingredients for Waffles
- 1 cup flour
- 3/4 cup milk
- 2 tbsp sugar
- 4 tbsp butter
- 1 tbsp cornflour
- 1/2 tsp baking powder
- 1/2 tsp vanilla essence
Ingredients for Chicken
- 2 pcs Chicken Breast, flattened with a mallet
- 1 cup cornflakes, crushed in a ziplock
- 1 cup flour; season with salt, pepper, paprika, garlic salt
- 1 egg, whisked
- Chives, to garnish
Instructions for Waffles
- In a saucepan on medium low heat, melt the butter for 3-4 minutes until it turns golden brown (be careful not to burn the butter). In a medium sized bowl, whisk to combine the flour, milk, sugar, cornflour, baking powder and vanilla essence. Stir in the melted butter and mix well. Pour batter into a waffle iron and cook for 5-7 minutes, until crispy.
Instructions for Chicken
- Set up a breading station with the usual suspects (seasoned flour, eggs) and the crushed cornflakes.
- Dip the flattened chicken breast first in flour. Shake it off! Then dip in the eggs. Shake it off! Then in the cornflakes, and place on a flat surface. Repeat with the second chicken breast.
- Heat a pan on medium heat. Add 5 tablespoons of oil to shallow fry ’em in the pan. Once the oil is almost hot, place both chicken breasts in the pan. Cook for 4-5 minutes on each side but don’t let the cornflakes burn. Once cooked, remove from pan and gently pat dry to get rid of any excess oil.
- To assemble: Place the chicken on top or between your waffles and garnish with fresh chives.
Gouda Tip: Drizzle some maple syrup or sriracha (or both) and serve with a side of chorizo sausages.
