Citrus Avocado Salad

Ingredients

  • 2 oranges
  • 2 grapefruits
  • 2 tbsp fresh lemon juice
  • Salt, to taste
  • 1 avocado, cut into large chunks
  • 3 tbsp roasted pistachios, finely crushed
  • 1 tbsp tarragon leaves

Instructions

  • Using a paring knife (or your hands), remove peel and white pith from citrus fruits, being careful not to remove too much of the flesh. Slice ’em however you like and transfer to a medium bowl. Add a splash of lemon juice and some salt. Toss and let sit it for 5 minutes so citrus can release some of their juices.
  • Transfer to a large plate (leaving the citrus juice behind) and tuck some avocado in between & around citrus. Then, spoon the citrus juice over your fresh summer salad.
  • Top it off with roasted pistachios and tarragon leaves.
