
Ingredients
- 1/2 cup candycane beetroot (or any other beets), sliced
- 1/4 cup red cabbage, shredded (optional)
- 1 cup lettuce
- 1/2 cup rocket leaves
- 1/3 cup cherry tomatoes
- 1/2 cucumber or zucchini, sliced
- 1/2 cup carrots or pepper, sliced
- 1/3 cup feta cheese, crumbled (optional)
- Zest of 1/2 lemon
- Juice of 1 lemon
- 1 tbsp extra-virgin olive oil
- 1 tsp Dijon mustard
- 1 tbsp balsamic vinegar
- 1 tsp sugar
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- To make the dressing: Mix lemon zest, lemon juice, olive oil, mustard, balsamic vinegar, sugar, salt and pepper in a small bowl. Whisk to blend.
- Throw all your other ingredients in a salad bowl and drizzle the dressing. Toss & serve this salad gold immediately.
