
Ingredients
For the Minced Chicken
- 1/2 tbsp neutral oil
- 300gm minced chicken
- 2 tsp hoisin sauce
- 2 tsp mirin
- 1 tsp light soy sauce
- 1/2 tsp five spice powder
- 1/3 cup chiu chow chilli oil (use 80% chilli and 20% oil)
For the sauce
- 2 tbsp tahini
- 3 tbsp soy sauce
- 2 tsp sugar
- ¼ tsp five spice powder
- ¼ teaspoon black pepper
- 1/2 cup chiu chow chilli oil (use 80% chilli and 20% oil)
- 2 cloves garlic, minced
- ¼ cup hot cooking water from the noodles
Noodles & Veg:
- 2 packets noodles (storebought)
- 1 small bunch bok choy
- 1 spring onion, white and green
- Handful of unsalted peanuts
Preparation
- In a deep pan, boil water and cook the noodles according to the packaging instructions. Set aside 1/4 cup of hot cooking water for the sauce.
- For the sauce – combine all the ingredients in a bowl and set aside.
- In a wok, heat 1/2 tbsp of oil over medium heat and cook the minced chicken until white and cooked through. Add the hoisin sauce, mirin, light soy sauce, chiu chow chilli oil and five spice powder. Cook until all the liquid is evaporated. Set aside.
- In the wok on medium heat, add the white parts of the spring onion and cook for 1-2 minutes. Add the sauce that you prepared earlier. Add the boiled noodles and minced chicken to the sauce mixture and stir it around.
- Top with green parts of the spring onion and unsalted peanuts and enjoy!
