TK’s Egg Fried Rice

Ingredients

  • 1 egg
  • Pinch of salt
  • 1 tsp red chilli
  • 2 tbsp vegetable oil
  • 1 onion, diced
  • 1 tbsp garlic, minced
  • 1/2 cup mushrooms (shiitake, oyster, dehydrated)
  • Chinese cabbage
  • Bamboo shoot
  • 1/2 cup red & green bell peppers
  • 1 spring onion
  • 3 cups sticky rice, boiled
  • 1 tbsp soy sauce
  • 1 tbsp chilli bean sauce
  • 2 tsp chilli powder
  • Fresh basil, to garnish
  • Chilli flakes, to garnish

Preparation

  • In a small bowl, add salt, red chilli & eggs and mix well. Add this mix to a pan over medium-high heat and stir quickly. Once the eggs are scrambled, remove from pan.
  • In the same pan over medium-high heat, add oil. Cook onions until brown, and then stir in some garlic. Then, add the mushrooms and toss for 2 minutes.
  • Then add the Chinese cabbage, bamboo shoot & bell peppers. Stir well, and then add the spring onions.
  • Add the scrambled eggs, chilli powder and boiled sticky rice. Stir in soy sauce and chilli bean sauce.
  • Top it off with fresh basil, chilli flakes and serve hot.
