
Ingredients for Omelette
- 5 large egg whites
- 3 large egg yolks
- 2 tablespoons unsalted butter, halved
- salt, to taste
- pepper, to taste
- fresh chive, chopped, for garnish
- bacon bits, for garnish
Ingredients for Hash Browns
- 2 medium sized potatoes
- 1/4 cup butter, melted
- 3/4 cup shredded cheddar cheese
- 1 eggs, whisked
- 5g fresh chives, chopped
- 2 tsp garlic salt
- 1 tsp dried oregano
- 1/4 teaspoon pepper
Instructions for Omelette
- Separate the egg whites and the egg yolks in two separate bowls. You’ll only need 3 yolks.
- Using a hand blender, blend the egg yolks until they become smooth and pale in colour.
- Transfer the egg whites to a large bowl and blend with a hand blender until they triple in size and become white with medium peaks.
- Carefully fold the egg yolks into the egg whites until fully incorporated.
- Heat a non stick pan on medium heat. Pour the egg mixture into a medium nonstick frying pan with a lid. Cook over medium-low heat until bottom of omelette has set, about 5 minutes.
- Lift up each side of the omelette and drop a tablespoon of butter underneath.
- Cover the pan and cook for another 5 minutes, or until the top of the omelet has set.
- Remove the lid and season the omelette with salt and pepper. Remove the pan from the heat.
- Fold the omelette onto a plate and garnish with chives and bacon bits.
Instructions for Hash Browns
- Preheat oven to 200˚C.
- Peel and grate the potatoes.
- Drop shredded potatoes into a large bowl of ice water to remove surface starch.
- Squeeze potato shreds and transfer to a large bowl.
- Add butter, cheese, eggs, chives, garlic salt, oregano, and pepper in with the shredded potatoes. Mix together.
- Take a handful of the mixture and pack it on a baking sheet into desired hash brown shape.
- Bake for 40-45 minutes or until brown and crispy and enjoy!
