Omelette You In On A Secret

Ingredients for Omelette

  • 5 large egg whites
  • 3 large egg yolks
  • 2 tablespoons unsalted butter, halved
  • salt, to taste
  • pepper, to taste
  • fresh chive, chopped, for garnish
  • bacon bits, for garnish

Ingredients for Hash Browns

  • 2 medium sized potatoes
  • 1/4 cup butter, melted
  • 3/4 cup shredded cheddar cheese
  • 1 eggs, whisked
  • 5g fresh chives, chopped
  • 2 tsp garlic salt
  • 1 tsp dried oregano
  • 1/4 teaspoon pepper

Instructions for Omelette

  • Separate the egg whites and the egg yolks in two separate bowls. You’ll only need 3 yolks.
  • Using a hand blender, blend the egg yolks until they become smooth and pale in colour.
  • Transfer the egg whites to a large bowl and blend with a hand blender until they triple in size and become white with medium peaks.
  • Carefully fold the egg yolks into the egg whites until fully incorporated.
  • Heat a non stick pan on medium heat. Pour the egg mixture into a medium nonstick frying pan with a lid. Cook over medium-low heat until bottom of omelette has set, about 5 minutes.
  • Lift up each side of the omelette and drop a tablespoon of butter underneath.
  • Cover the pan and cook for another 5 minutes, or until the top of the omelet has set.
  • Remove the lid and season the omelette with salt and pepper. Remove the pan from the heat.
  • Fold the omelette onto a plate and garnish with chives and bacon bits.

Instructions for Hash Browns

  • Preheat oven to 200˚C.
  • Peel and grate the potatoes.
  • Drop shredded potatoes into a large bowl of ice water to remove surface starch.
  • Squeeze potato shreds and transfer to a large bowl.
  • Add butter, cheese, eggs, chives, garlic salt, oregano, and pepper in with the shredded potatoes. Mix together.
  • Take a handful of the mixture and pack it on a baking sheet into desired hash brown shape.
  • Bake for 40-45 minutes or until brown and crispy and enjoy!
