Let’s Taco About This Bowl

Ingredients

  • 500g shrimp, peeled and deveined, tails removed
  • 1 tbsp olive oil
  • 1 tsp minced garlic
  • 1/2 tbsp + 2 tsp lemon juice
  • Salt & pepper, to taste
  • 1/2 mango, chopped
  • 1/3 onions, chopped
  • 1 tbsp cherry tomatoes, chopped
  • 2-3 jalapeños, diced
  • 2 tsp chopped fresh cilantro
  • 10 tortilla chips
  • Red cabbage or red veined sorrel (or any leafy greens)
  • 1 avocados, pitted and sliced
  • 4 tbsp chipotle sauce
  • 2 tsp taco seasoning (optional)

Instructions

  • Heat a grill or a grill pan over high heat; oil the grill grate. In a medium mixing bowl, season shrimp with lemon juice, olive oil, minced garlic, salt & pepper and massage. When grill pan is hot, place shrimp in a single layer. Cook for 2 minutes on each side and transfer to plate.
  • In a bowl, stir chopped mango, onion, cherry tomatoes, jalapeños, cilantro and 2 tsp lemon juice. Set aside.
  • Plate grilled shrimp, mango salad, leafy greens, avocado slices and crispy tortilla chips into a large bowl. Drizzle some chipotle sauce and sprinkle taco seasoning, just before digging in!
