
Ingredients
- 500g shrimp, peeled and deveined, tails removed
- 1 tbsp olive oil
- 1 tsp minced garlic
- 1/2 tbsp + 2 tsp lemon juice
- Salt & pepper, to taste
- 1/2 mango, chopped
- 1/3 onions, chopped
- 1 tbsp cherry tomatoes, chopped
- 2-3 jalapeños, diced
- 2 tsp chopped fresh cilantro
- 10 tortilla chips
- Red cabbage or red veined sorrel (or any leafy greens)
- 1 avocados, pitted and sliced
- 4 tbsp chipotle sauce
- 2 tsp taco seasoning (optional)
Instructions
- Heat a grill or a grill pan over high heat; oil the grill grate. In a medium mixing bowl, season shrimp with lemon juice, olive oil, minced garlic, salt & pepper and massage. When grill pan is hot, place shrimp in a single layer. Cook for 2 minutes on each side and transfer to plate.
- In a bowl, stir chopped mango, onion, cherry tomatoes, jalapeños, cilantro and 2 tsp lemon juice. Set aside.
- Plate grilled shrimp, mango salad, leafy greens, avocado slices and crispy tortilla chips into a large bowl. Drizzle some chipotle sauce and sprinkle taco seasoning, just before digging in!
