Hopeless Ramentic

Ingredients

  • 6 cloves of garlic, thinly sliced (for garlic chips)
  • Vegetable oil, 1/4 cup
  • 1 inch ginger, finely diced
  • 4 pcs bok choy, quartered
  • 1/2 onion, sliced
  • 4 spring onions, chopped (separate white and greens)
  • 1 tbsp chilli flakes
  • 20 pcs button mushrooms
  • 4 tbsp tomato puree
  • 2 packs, ramen noodles
  • 1 tbsp black sesame
  • 1 tbsp mirin
  • 1 tbsp oyster sauce
  • 5 cups chicken stock
  • 2 tbsp chiu chow chilli oil
  • 1 tbsp soy sauce
  • 4 jammy eggs (boiled for 6 minutes)
  • 1 chicken breast
  • 1/4 cup breadcrumbs
  • 1/4 cup flour
  • 1 egg
  • 1/2 tsp onion powder, garlic powder, cayenne powder
  • Salt and pepper
  • Olive oil
  • 1/2 Nori sheet, slice for garnishing

Preparation

Garlic Chips

  • Heat 1/4 cup of vegetable oil in a pan on low-medium heat.
  • Add thinly sliced garlic chips and cook until golden brown.
  • Drain oil and set aside.

Ramen Noodles

  • Boil water and put the ramen noodles and cook them as per the directions on the packet. Set aside for later.

Katsu Chicken

  • Preheat oven to 180° C.
  • Level your chicken breasts using a mallet to 1/2inch thickness.
  • Mix your breadcrumbs/panko with the onion powder, garlic powder, and cayenne powder.
  • Prepare egg, flour, and breadcrumbs for breading (flour >> egg >> breadcrumbs) the chicken.
  • Place breaded chicken on a baking tray lined with baking paper.
  • Cook in the oven for 10-12 minutes or until cooked through.

Ramen Broth

  • Heat a deep pan on medium heat.
  • Add 2 tbsp olive oil and add the ginger, onion, spring onion (white part), and chilli flakes and cook for 3-5 minutes.
  • Remove from heat and place it in a blender and puree the mixture.
  • Add it back to the heat and then add the tomato puree, mushrooms and sesame seeds (save some for garnish) and cook for 3-4 minutes
  • Add 5 cups of water to the pot and bring to a simmer.
  • In the meantime, in another pot, boil water and add all the bok choy and cook until bright green (2-3 minutes). Drain the bok choy.
  • In your ramen pot, add the mirin, soy sauce, chiu chow chili oil and oyster sauce and mix the broth.
  • Let it simmer for 5-7 minutes until everything is combined.

Plating

  • Add some noodles to your bowl.
  • Add the ramen broth and then top with the bok choy, jammy eggs, katsu chicken, spring onions (green parts), garlic chips, and some black sesame.
