Kimchi and Bacon Cheese Sandwich

Serves: 1

Ingredients:

  • 2 slices of bread
  • 1/2 cup kimchi
  • 4 rashers of streaky bacon
  • 25-30g of shredded cheddar cheese
  • Mayonnaise
  • Butter

Instructions

  • Heat a pan on medium heat. Add bacon and cook until crispy.
  • Remove bacon from pan but let the bacon oil sit in the pan.
  • Butter both slices of breads on the inside.
  • Start by adding the kimchi, then the bacon, and then the cheese.
  • Put the pan on medium heat
  • Close the sandwich and spread mayonnaise end to end on the top side.
  • Carefully flip the sandwich with the mayo side hitting the pan first.
  • Press the top of the sandwich so it flattens slightly.
  • Whilst it is cooking, spread mayonnaise on now what is the top side.
  • Flip the sandwich once the bottom side is nicely browned. Be careful not to burn it so keep checking.
  • Cook the sandwich on both side until nicely browned and cut through and enjoy!
