Kimchi Fried Rice

Ingredients

  • 3 tbsp oil
  • 3 slices bacon
  • 2 green onions, whites and greens separated
  • 100g baby spinach or 1 head napa cabbage
  • 5 garlic cloves, finely diced
  • 6 cups cooked rice
  • 2 ½ tablespoons fish sauce
  • 1 ½ tablespoon soy sauce
  • 3/4 cup kimchi
  • ½ cup green peas
  • 2 fried eggs, for serving (optional)
  • Toasted sesame oil

Instructions

  1. In a large nonstick skillet or wok over medium-high, add the bacon and cook until the bacon is crispy. Transfer the bacon to a heatproof bowl, leaving as much of the bacon oil in the skillet as you can.
  2. Add white parts of the green onion along with the garlic to the pan. Cook for 3-4 minutes.
  3. Stir in baby spinach and a pinch of salt. Cook until spinach. is wilted. Transfer to the bowl with the bacon.
  4. Add the 3 tbsp oil to skillet and raise heat to high. Add rice and toss thoroughly to coat with oil.
  5. Drizzle in the fish sauce and soy sauce over. Let rice sit until sizzling stops and it starts to crackle and crisp, 3 to 4 minutes.
  6. Toss, taste, and add more fish sauce or soy sauce if necessary.
  7. Add in bacon mixture, kimchi and peas, then transfer to your desired dish. Top with scallion greens, more kimchi to taste, and fried eggs, if using. Drizzle everything with sesame oil.
