Baked Potato Bacon Us Crazy

Ingredients

  • 5 potatoes
  • 1/4 cup butter
  • 1/4 cup sour cream
  • 1 green onion, thinly sliced, white and green parts divided
  • 3/4 cup shredded Cheddar
  • 6 slices crispy bacon, crumbled
  • Kosher salt
  • Freshly ground black pepper
  • Fresh parsley, to garnish

Preparation

  • Preheat oven to 200°C. Prick potatoes all over with a fork or sharp knife and wrap tightly in foil. Bake until soft, about 1 hour.
  • Unwrap each potato and cut lengthwise slits on top. Carefully scoop out flesh from the centre of each potato into a medium bowl and then add butter, sour cream, green onion whites, half the cheddar, and half the bacon. Season with salt and pepper.
  • Spoon the filling back into each potato, mounding it on top. Sprinkle with remaining cheese and place it in the oven again until melted, about 5-7 minutes.
  • Remove from oven, top it off with scallion greens, remaining bacon & parsley.
