Lychee Ginger Sorbet

Ingredients

  • 2 cups lychee, de-seeded
  • Thumb-sized piece of ginger, sliced
  • Ginger syrup, to serve

Instructions

  1. Blitz fresh lychees and slices of ginger in a blender until very smooth. Pour into a container and freeze for 5 hours.
  2. Break up the frozen mix and blitz again in in a food processor, until smooth. Return to the container and freeze again, overnight.
  3. Scoop and serve the following day with ginger syrup poured over.
