Okra Fries

Ingredients

Okra

  • 350g Okra, each piece halved lengthwise
  • 1tsp ginger paste
  • 1tsp garlic paste
  • 1 tsp red chilli powder
  • 25g chickpea flour
  • 12g cornflour

Masala Mix

  • 1/4tsp fine sea salt
  • 1/4tsp amchur
  • 1/8 tsp red chilli powder

Instructions

  • Mix together garlic, ginger, chilli powder and 8 tsp water.
  • Add the okra to the ginger-garlic mixture
  • Combine the cornflour and gram flour.
  • Dust the flour mixture of the okra and toss to combine.
  • Few methods of going about getting crispy okra fries:
  1. Deep Fry in 180C hot oil until crispy golden- crispiest
  2. Bake in a preheated 180C oven for 20-25 minutes. Not as crispy but flavours work.
  3. Use an air fries to crisp up your okra.
  • After cooking the okra, sprinkle your masala mix over the okra and toss to combine.
  • Serve with some tamarind chutney or chilli chutney.
