
Ingredients
Okra
- 350g Okra, each piece halved lengthwise
- 1tsp ginger paste
- 1tsp garlic paste
- 1 tsp red chilli powder
- 25g chickpea flour
- 12g cornflour
Masala Mix
- 1/4tsp fine sea salt
- 1/4tsp amchur
- 1/8 tsp red chilli powder
Instructions
- Mix together garlic, ginger, chilli powder and 8 tsp water.
- Add the okra to the ginger-garlic mixture
- Combine the cornflour and gram flour.
- Dust the flour mixture of the okra and toss to combine.
- Few methods of going about getting crispy okra fries:
- Deep Fry in 180C hot oil until crispy golden- crispiest
- Bake in a preheated 180C oven for 20-25 minutes. Not as crispy but flavours work.
- Use an air fries to crisp up your okra.
- After cooking the okra, sprinkle your masala mix over the okra and toss to combine.
- Serve with some tamarind chutney or chilli chutney.
