
Ingredients
- 2 tsp olive oil
- 2 tsp minced garlic
- 1/3 cup tomato puree
- 2 tbsp tomato ketchup
- 2 tsp oregano
- Salt & pepper
- 2 tbsp butter
- 2 slices bread
- 1 tbsp basil leaves
- 1 cup shredded mozzarella
- 10-15 slices pork pepperoni
- 1 tbsp finely grated parmesan
- Crushed red pepper flakes, for topping
Preparation
- Make the pizza sauce: On medium heat, add the olive oil to a pan. Then add minced garlic and tomato puree and stir well for 2-3 minutes. Once it starts to caramelise, add the tomato ketchup, oregano, salt & pepper and stir for 30 seconds. Your pizza sauce is ready!
- Assemble sandwich: Spread butter on the outside of the slices of bread. On the inside of two slices, spread pizza sauce. Then top it off with mozzarella (leaving some for later), pepperoni and parmesan. Place the remaining slice of bread on top, buttered side up.
- In a skillet over medium heat, add a dash of butter and cook the sandwich until crispy for 3-4 minutes per side.
- Remove from heat. Spread the remaining pizza sauce on top of the sandwich, top it off with the remaining mozzarella, pepperoni and fresh basil. Place it in an oven at 180°C until cheese is melty & golden and pepperoni is crispy for 5 minutes.
- Garnish with red pepper flakes and have your BEST snack of 2020.
