
Ingredients
- Fresh croutons, 2 slices of toasted bread.
- 3 tbsp extra-virgin olive oil
- 2 green onions
- 1tbsp fresh lemon juice
- 1 tbsp rice vinegar
- 1 tbsp dijon mustard
- 1 tbsp mayonnaise
- 1 chicken breast, poached and shredded
- 4 watermelon radishes, sliced
- 2 leaves of flat kale, stems removed.
- 1 avocado, sliced
Instructions
- Preheat oven to 200C.
- In a large bowl, toss the watermelon radish and green onion with 1 tbsp of olive oil and salt&pepper.
- Line a baking dish and put the radish and green onions on the baking dish and bake until green onions are charred and radishes are cooked.
- Meanwhile, for the dressing – add 2 tbsp olive oil, lemon juice, rice vinegar, and dijon mustard in a bowl and combine. After the green onions are charred, very finely chop them and add to the dressing. Mix to combine thoroughly. Your dressing is ready!
- Assemble the salad by mixing the croutons, chicken, kale, and radish with the dressing. Top the salad with the sliced avocado.
