Quick Tomato Salad with Sumac

Ingredients

  • 1/2 small onion, slice into circles
  • 1 tbsp sumac
  • 1 tsp white wine vinegar
  • 250g cherry tomatoes
  • 2 tbsp olive oil
  • 10 basil leaves

Instructions

  1. Heat a pan on low heat. Add 1 tbsp of olive oil and add your cherry tomatoes and cover the pan with a lid. Cook for 15 minutes until slightly mushy. Put in a bowl and refrigerate until cool.
  2. Place the onion in a small bowl with sumac, vinegar and some salt. Set aside in the fridge for 30 minutes.
  3. Combine the tomato and onions once done. Add remain olive oil and basil leaves. Toss to combine and the salad is ready!
