
Ingredients
- 1/2 small onion, slice into circles
- 1 tbsp sumac
- 1 tsp white wine vinegar
- 250g cherry tomatoes
- 2 tbsp olive oil
- 10 basil leaves
Instructions
- Heat a pan on low heat. Add 1 tbsp of olive oil and add your cherry tomatoes and cover the pan with a lid. Cook for 15 minutes until slightly mushy. Put in a bowl and refrigerate until cool.
- Place the onion in a small bowl with sumac, vinegar and some salt. Set aside in the fridge for 30 minutes.
- Combine the tomato and onions once done. Add remain olive oil and basil leaves. Toss to combine and the salad is ready!
