Radish Frittata

Ingredients

  • 1 bunch baby spinach
  • 1/2 onion, sliced
  • 3 watermelon radishes, thinly sliced
  • 1/2tbsp olive oil
  • 1 red chilli, finely sliced
  • 1 large leek, thinly sliced
  • 1/2 tsp garam masala
  • 6 eggs, beaten
  • Small bunch basil leaves, roughly chopped
  • Small bunch parsley leaves, finely chopped
  • 1/4 cup grated cheddar
  • Crumbled goat cheese, for the top

Preparation

  • Preheat oven to 180° C.
  • Place a pan on medium heat. Add 1/2 tbsp olive oil.
  • Add the radish, onion, leek, and chilli and cook for 7-8 minutes. Add spinach and cook for 1-2 minutes. Remove the pan from the heat and add to an oven-proof dish.
  • Meanwhile beat the 6 eggs vigorously until combined. Add the garam masala.
  • Add the eggs to the oven proof dish.
  • Top with some grated cheddar cheese and place it in the oven for 10 minutes.
  • Serve it piping hot with some crumbled goats cheese.
