
Ingredients
- 1 bunch baby spinach
- 1/2 onion, sliced
- 3 watermelon radishes, thinly sliced
- 1/2tbsp olive oil
- 1 red chilli, finely sliced
- 1 large leek, thinly sliced
- 1/2 tsp garam masala
- 6 eggs, beaten
- Small bunch basil leaves, roughly chopped
- Small bunch parsley leaves, finely chopped
- 1/4 cup grated cheddar
- Crumbled goat cheese, for the top
Preparation
- Preheat oven to 180° C.
- Place a pan on medium heat. Add 1/2 tbsp olive oil.
- Add the radish, onion, leek, and chilli and cook for 7-8 minutes. Add spinach and cook for 1-2 minutes. Remove the pan from the heat and add to an oven-proof dish.
- Meanwhile beat the 6 eggs vigorously until combined. Add the garam masala.
- Add the eggs to the oven proof dish.
- Top with some grated cheddar cheese and place it in the oven for 10 minutes.
- Serve it piping hot with some crumbled goats cheese.
