
Ingredients
- 2 rambutan, peeled & de-seeded
- 45 ml gin
- 2 tsp lemon juice
- 1 tsp elderflower syrup
- 30 ml tonic
Instructions
- Purée the rambutan in a blender or small food processor.
- Add the gin, elderflower syrup, lemon juice, rambutan purée to a cocktail shaker and fill with ice. Shake vigorously and pour into a cocktail glass.
- Top it off with a splash of tonic and garnish with rambutan peel.
