Rambutan Martini

Ingredients

  • 2 rambutan, peeled & de-seeded
  • 45 ml gin
  • 2 tsp lemon juice
  • 1 tsp elderflower syrup
  • 30 ml tonic

Instructions

  • Purée the rambutan in a blender or small food processor.
  • Add the gin, elderflower syrup, lemon juice, rambutan purée to a cocktail shaker and fill with ice. Shake vigorously and pour into a cocktail glass.
  • Top it off with a splash of tonic and garnish with rambutan peel.
