
Ingredients
For Waffles
- 1 cup flour
- 3/4 cup milk
- 2 tbsp sugar
- 4 tbsp butter
- 1 tbsp cornflour
- 1/2 tsp baking powder
- 1/2 tsp vanilla essence
For Sriracha-Soy Glaze
- 3 tbsp Sriracha
- 1/2 tsp sesame oil
- 1/4 tsp soy
For Caramelised Onions
- 1/2 onion, finely chopped
- 1 tsp butter
- 2 tsp balsamic vinegar
- 1 tsp salt
- 1 tsp brown sugar
For Fried Eggs
- 1 tbsp olive oil
- 2 eggs
For Garlic Chips
- 1/4 cup garlic cloves, thinly sliced
- 1 tbsp olive oil
For Toppings
- 1 tbsp maple syrup
- 6 crispy streaky bacon strips, chopped into bacon bits.
- Spring onion, to garnish
Instructions
- To make the waffles: In a saucepan on medium low heat, melt the butter for 3-4 minutes until it turns golden brown (be careful not to burn the butter). In a medium sized bowl, whisk to combine the flour, milk, sugar, cornflour, baking powder and vanilla essence. Stir in the melted butter and mix well. Pour batter into a waffle iron and cook for 5-7 minutes, until crispy.
- To make the garlic chips: Add 1 tbsp oil and fry the garlic cloves in hot oil until golden brown. Remove the garlic chips and drain excess oil on tissue paper, set aside. Leave the remaining oil in the pan.
- To make the caramelised onions: Heat the remaining oil and add butter in the same frying pan over low heat. Add the onions and a pinch of salt; cook very slowly for 15 minutes, stirring occasionally to prevent them from burning. When onions are softened and slightly golden, add some sugar and balsamic. Cook over low heat for another 5-7 minutes, stirring occasionally, until sticky and caramelised. Set aside.
- To make the sriracha-soy glaze: Whisk sriracha, soy and sesame oil in a small bowl. Set aside.
- To make the fried eggs: In a frying pan, heat olive oil and break two eggs into the pan. Cook until the whites are set and yolk is runny. Set aside.
- To assemble: Place the crisp waffles on a plate and top ’em off with your sunny side up eggs. Drizzle your sriracha mix and maple syrup. Garnish with bacon bits, fried onion, garlic chips and spring onions.
