Stir Fried Prawns & Crispy Basil

Ingredients

  • 3 chillies, coarsely chopped
  • 6 garlic cloves, smashed
  • 1 tsp salt
  • 4 tbsp oil
  • 500 g prawns
  • 1 cup basil leaves

Preparation

  • Blend chillies, garlic, salt, and oil in a blender until smooth. Transfer marinade to a medium bowl and add the prawns; toss to coat. Let it sit for 10 minutes.
  • Heat remaining 1 tbsp oil in a large nonstick skillet over high heat. Just when the oil begins to smoke, add the prawns (leaving marinade behind) and cook, turning once, until lightly charred around the edges for about 1 minute per side. Remove pan from heat.
  • Crisp basil in a skillet and toss vigorously until wilted.
  • Transfer the prawns to a platter, top it off with basil & serve with lime wedges alongside.
