Sweet Lime Braised Eggs

Ingredients

  • 1 tbsp unsalted butter
  • 2tbsp olive oil
  • 1 large leek, chopped 1/2 cm slices
  • 1 tsp cumin seeds
  • 1/4 peel of a whole sweet lime, diced
  • juice of half a sweet lime
  • 150ml water or stock
  • 100g baby spinach
  • 4 eggs
  • 1 tbsp za’atar
  • crumbled feta cheese

Instructions

  1. Heat a pan on medium heat. Pan must have a lid. Add the butter and 1 tbsp of oil.
  2. Add your leeks with some salt&pepper. Cook for 3-4 minutes
  3. Add your sweet lime peel and cumin. Cook for 1-2 minutes.
  4. Add the stock or water along with the juice of the sweet lime and boil until almost evaporated.
  5. Add the baby spinach and let it wilt.
  6. Make 4 indentations and gently put your eggs and top with a pinch of salt and cover with lid.
  7. Once slightly cooked – add feta cheese gently (don’t break the yolks!). Cover with the lid.
  8. Once the eggs are almost cooked, mix 1 tbsp of olive oil and 1 tbsp of za’atar in a bowl and using a brush, gently coat the eggs and the feta.
  9. Cover with the lid again for 30 seconds and your braised eggs are ready!
