
Ingredients
- 1 tbsp unsalted butter
- 2tbsp olive oil
- 1 large leek, chopped 1/2 cm slices
- 1 tsp cumin seeds
- 1/4 peel of a whole sweet lime, diced
- juice of half a sweet lime
- 150ml water or stock
- 100g baby spinach
- 4 eggs
- 1 tbsp za’atar
- crumbled feta cheese
Instructions
- Heat a pan on medium heat. Pan must have a lid. Add the butter and 1 tbsp of oil.
- Add your leeks with some salt&pepper. Cook for 3-4 minutes
- Add your sweet lime peel and cumin. Cook for 1-2 minutes.
- Add the stock or water along with the juice of the sweet lime and boil until almost evaporated.
- Add the baby spinach and let it wilt.
- Make 4 indentations and gently put your eggs and top with a pinch of salt and cover with lid.
- Once slightly cooked – add feta cheese gently (don’t break the yolks!). Cover with the lid.
- Once the eggs are almost cooked, mix 1 tbsp of olive oil and 1 tbsp of za’atar in a bowl and using a brush, gently coat the eggs and the feta.
- Cover with the lid again for 30 seconds and your braised eggs are ready!
