Tenderloin Burger

Burger Ingredients

  • 2 burger buns
  • 2 tsp melted butter
  • Burger Patty – Tenderloin
  • 4 strips streaky bacon
  • Bunch of leafy greens
  • 6 jalepeños, finely diced
  • 2 slices American cheese

Sriracha Aioli Ingredients

  • Kosher salt
  • 1 large egg yolk
  • 1 garlic clove, finely grated
  • 1 tsp vinegar
  • 3/4 cup oil
  • Freshly ground pepper
  • 1 tbsp Sriracha
  • 1 tsp chilli powder

Preparation for Burger

  • Cut your burger buns in half and spread melted butter on both halves.
  • Heat up a grill pan on medium heat. Toast the burgers and set aside.
  • In a separate pan on low-medium heat, lay out your bacon strips and ensure they’re not overlapping. Keep flipping and turning the bacon till it browns evenly. Transfer to another plate when crispy, but leave the remaining oil in the pan.
  • Keep the same pan on medium heat – add your burger patty and cook for 3-4 minutes until golden brown on one side. Flip the burger patty and cook for 3 minutes on the other side.
  • Add 1 slice of American cheese on top of the patty and cover the pan with a lid. The steam should melt the cheese over the patty. Note: In case it’s not steamy enough, add some water in the pan and then cover with a lid.
  • Repeat the same with the second burger patty.

Preparation for Sriracha Aioli

  • Whisk egg yolk, garlic and vinegar in a small bowl to combine.
  • Whisking constantly, gradually drizzle in oil and continue to whisk until aioli is thickened and emulsified.
  • Stir in some Sriracha, chilli powder and season with salt & pepper. Place it in the fridge to chill.

Assembly

  • Spread the aioli on both halves of the buns. On the bottom half – add your leafy greens, top it with the burger patty with melted cheese and finish with some chopped jalepeños and crispy bacon.

  2. Swap the patty with chicken/lamb/pork alternative, this recipes work well for all.
  3. Add toppings of your choice and customise the burger just the way you like. If you like it fully loaded, we’re partial to caramelised onions!
