These Chops Are Worth Your Thyme

Ingredients for Mutton Chops

  • 750g mutton chops
  • 2 tbsp olive oil
  • 11 garlic cloves, chopped
  • 1/3 tsp rosemary, chopped
  • 2-3 fresh rosemary sprigs
  • 2 tsp fresh thyme, chopped
  • Salt & pepper, to taste
  • 60ml Bourbon whiskey
  • Fresh parsley, to garnish

Ingredients for Glaze

  • 1 tbsp butter
  • 1/2 cup water

Instructions

  • Remove your mutton chops out of the packaging, pat ’em dry and bring to room temperature.
  • In a small mixing bowl, add olive oil, garlic cloves, rosemary, thyme, salt & pepper and mix well. Then add the chops to this marinade and rub the paste on both sides. Place it in the fridge for at least 1-2 hours.
  • Heat your griddle or pan until it sizzles when you add a drop of oil. Then, lower the heat to medium & sear the chops for 10 minutes on each side. Note: When you flip the chops to the other side, add a splash of Bourbon into the pan. Once cooked just the way you like, leave to rest in a warm place for 7-8 minutes.
  • In the meanwhile, to make the glaze: Add half cup water into the same pan. Once the water has reduced, turn the flame off and finish by adding a large knob of butter. Drizzle this glaze over the garlicky chops and garnish with some fresh parsley.

Gouda Tip: Serve ’em piping hot with a side of buttery mashed potatoes & crispy bacon bits.
