
Serves: 2
Ingredients:
- 300g jumbo prawns, deveined and peeled
- 75g butter
- 7 cloves garlic, grated
- 1 tsp ginger, finely chopped
- 2 spring onions, finely chopped
- 1.5 green chillies, finely chopped
- 1/2 tsp fresh black pepper, ground using pestle and mortar
- 1 tbsp coriander, finely chopped
- 1 tbsp basil, finely chopped
- 1 tbsp lime juice
Instructions
- Heat a pan on low-medium heat. Add the butter and let it melt.
- Add the garlic and ginger and let it cook until slightly golden brown and infused in the butter. Takes 6-8 minutes
- Then add the black pepper, chilli, and spring onions and turn the heat up and cook for about 1-2 minutes
- Add the prawns and cook for about 2-3 minutes on each side.
- Turn of the heat and quickly add the coriander, basil, and lime juice and mix through until the flavour infuses for about a minute or so.
- Serve with some Garlic Naan or bread of your choice.
