
Ingredients
- 1 cup rocket leaves
- 3 peaches, sliced
- 50g goats cheese (or feta cheese)
- 1 tbsp olive oil
- 1/2 tbsp white wine vinegar
- 1 tsp honey
- Pepper, to taste
- 2 tbsp pecans (or walnuts), toasted
Instructions
- Wash and dry the rocket leaves; set aside on a platter.
- In a small bowl, whisk together olive oil, white wine vinegar, honey & pepper. Toss half the dressing over the rocket leaves greens.
- Top ’em off with sliced peaches and crumbled goat’s cheese, and then drizzle the rest of the dressing.
- Garnish with toasted pecans or walnuts.
