Ingredients

• 1 cup rocket leaves
• 3 peaches, sliced
• 50g goats cheese (or feta cheese)
• 1 tbsp olive oil
• 1/2 tbsp white wine vinegar
• 1 tsp honey
• Pepper, to taste
• 2 tbsp pecans (or walnuts), toasted

Instructions

• Wash and dry the rocket leaves; set aside on a platter.
• In a small bowl, whisk together olive oil, white wine vinegar, honey & pepper. Toss half the dressing over the rocket leaves greens.
• Top ’em off with sliced peaches and crumbled goat’s cheese, and then drizzle the rest of the dressing.
• Garnish with toasted pecans or walnuts.
